Dear Heloise: I will be getting married later this year. I was wondering what is the best way to freeze the top of the wedding cake until our first anniversary? I've tried freezing cakes before and they always have an unpleasant taste to them.

We took your very good question to several bakeries in our area and here is the consensus. I'm sure others will appreciate the information.

Place the cake in an airtight plastic container with a tight-fitting lid. As an added precaution, you may want to wrap the cake in plastic before putting it in the container. Here's a hint: Freeze the cake first, take it out and then wrap it in plastic. It should be fine for up to a year in the freezer.

To defrost the cake, simply take it out of the freezer in the morning, unwrap the cake and allow to defrost at room temperature.
