Reid's Tuna Casserole
Ingredients
- 2 Tablespoons onion, chopped
- 2 Tablespoons pepper, chopped
- 3 Tablespoons flour
- 1 cup milk
- 1 can condensed chicken noodle soup
- 1 can tuna
- juice of 1 lemon
- 8 slices of cheese
- cooked rice
Directions
- Brown the onion and pepper in a small amount of oil. While strring, add the flour; then add the milk and soup. Stir until thickened.
- Add tuna and lemon juice. Pour into a 13x9 inch casserole dish. Place cheese slices on top.
- Bake at 400°F. for 30 minutes or until cheese is bown. Serve on rice.
My Experience
This is a family recipe that my Mom read to me over the phone, but she had to make up the amounts of the ingredients, since it has never really been written down. I added extra lemon to give it a special zing (Mom said half a lemon), and it really does taste like I remember it.
